Paul Ippolito Talks Wines
With Paul Ippolito For The Cellar
Taylors Jaraman Cabernet Sauvignon 2004
Smooth
plummy fruit, a tad closed at first but opens up well with time. Tight
and elegantly structured with hints of allspice, roasted meats and good
black fruits as well. Soft and well rounded with ripe smooth tannins
make this good drinking now. Liquorice and raspberries on the finish,
long and mellow with seamless oak. Try it with Moroccan lamb.
Drink to 2016. About $30. 92/100 – Excellent.
Delicious Red Drinking
Penley Estate Gryphon Coonawarra Merlot 2005
Vibrant
fresh full plums - ripe and upfront, followed by raspberries,
blueberries and violets. Gloriously uplifted fruit. A balanced smooth
velvety Merlot brimming with cherry and plums. Melded quite discernable
oak with ripe tannins as well. Delicious in mouth feel. Try it with
marinated pork fillets. Drink to 2015. About $19. 93/100- Excellent.
Warm Weather White Drinking
Tranquil Vale Semillon 2006

Hunter Valley Semillon. A light and breezy Semillon that is young,
fresh and vibrant in composition. Full of citrus characters, plenty of
green herbs, straw and a light hint of tropical fruit. Pure fruit at
that accompanied by lively acidity. The lemons and limes linger on the
finish to make for a refreshing well made Semillon. Try this with
grilled marinated chicken breast.
