Paul Ippolito Talks Wines
With Paul Ippolito Top Class Semillon
Meerea Park Hell Hole Semillon 2007 Fantastic
aromas, classically varietal in nature. Fresh and invigorating, limes,
limes and limes abound. Ripe resplendently lively and fresh. Lemon
citrus follows. A gloriously composed wine with a clean crisp finish.
Beautifully balanced and superbly drinkable. Really spot on stuff. Try
with stuffed squid. Drink to 2020. About $25. 95/100 – Superb.
Value Red Climbing Cabernet Sauvignon 2005
This
Climbing brand label has developed such a positive reputation for
affordable high quality and well crafted wine so quickly. This Cabernet
is continuing testimony to this. Ripe rich blackcurrants, liquorice and
spicy plums. Mulberries and blueberries as well. Fresh vibrant fruit –
elegant and balanced. Well rounded black fruit flavours and a lingering
length. Good oak, fine tannins and a Cabernet shall keep and develop
for a few years yet but you can still enjoy a few glasses now. Try with
chicken and olive in a tomato sauce casserole.
