Ingredients for Dressing:
8 Tablespoons Olive Oil
4 Tablespoons Wine Vinegar
2 Level Teaspoons Dijon Mustard
1 Tablespoon Chopped Onion
1 Tablespoon Chopped Parsley
Black Pepper (Freshly Ground)
Ingredients for Salad:
2 Heads Green Celery
90g Walnuts
5 Red Eating Apples
Method:

Make the dressing by placing all the ingredients into a screw topped jar and shake well.

Place jar in refrigerator and chill for about 30 minutes.

Trim the ends off the parsley and split up into sticks.

Wash and cut into thin julienne strips about 5cm long. Place strips into a serving bowl.

Cut the walnuts into small pieces and place in the bowl with the celery.

Core the apples and cut into cubes and add to the celery and nuts.

Pour enough of the chilled dressing to moisten and then mix thoroughly.
