French Apple Tart
Ingredients
235ml (1cup) plain flour
5ml (1tsp) sugar
85g (1/3cup) butter
900g (2lbs) Granny Smith apples
30ml (2tbsp) water
grated peel and juice of 1 lemon
60ml (4tbsp) apricot jam
225g (1/2lb) Golden Delicious apples
Method

Preheat oven to 180C (350F) degrees.

Sift the flour into a large bowl and mix in the sugar.
Rub or cut in 60g (1/4 cup) of the butter until mixture
resembles coarse crumbs. Add enough water to create soft
dough. Roll the dough out on a lightly floured surface.
Line a loose-bottomed tart pan with the rolled out dough.
Use a fork and pierce the bottom of dough all over. Bake
the dough for 10 minutes.

Peel, core and slice the Granny Smith apples. Place the
apple slices in a saucepan with 30ml (2 tbsp) of water
and the remaining butter. Cover and simmer for about 15
minutes, until the apples are soft. Add the lemon peel
along with 45ml (3 tbsp) of jam and cook for another 15
minutes, or until thickened.

Spoon the apple puree into the pastry shell and set aside
to cool.

Peel, core and cut the Golden Delicious apples into thin
slices. Arrange the apple slices in an overlapping circle
around outside edge of the tart. Next, make another smaller
overlapping circle in the center. Brush the top with lemon
juice. Bake for about 40 minutes or until golden brown
on top. Heat the remaining jam and brush over the tart
to glaze.

Serve warm with ice cream, sprinkled with cinnamon.
