Baked Tomatoes With Cucumbers

Baked Tomatoes With Cucumbers can be served as a side dish to a steak or grilled chicken slices or on their own for lunch. Serves four.


2 Cucumbers (Peeled & Diced)
4 Large Tomatoes
1 Tablespoon Onion (Grated)
1 Tablespoon Lemon Juice
85g Butter
85ml Water
Salt & Pepper (To Taste)
Bread Crumbs
Parsley (Chopped)


  1. Cut a slice off the top of the tomatoes and scoop out the pulp.
  2. Turn the tomatoes upside down for 15 minutes and allow to drain.
  3. Mix together cucumbers, onion, lemon juice, 85g butter, water and salt & pepper in a pot.
  4. Cook for five minutes.
  5. Mix in the tomato pulp
  6. Fill the tomato casings with the cooked cucumber mix.
  7. Sprinkle with breadcrumbs and chopped parsley and "dot" with butter.
  8. Bake in a 200°C oven for 20 minutes or until the tomatoes are tender and the crumbs goldern brown.
