BBQ Chicken St Louis

Continuing our BBQ theme, spice up that barbecued chicken with a touch of southern flavour by lavishly basting it in our St Louis style sauce. Serve up with a tossed Greek salad.


2kg Chicken (Cut into chunky pieces)

Sauce Ingredients:

280g Leggo Tomato Paste
1 Medium Onion (Cut into 4 pieces)
¼ Cup Brown Sugar
½ Teaspoon Nutmeg
¼ Teaspoon Basil
½ Green Pepper (Chopped into largish pieces)
2 Cloves Garlic
¼ Cup Vinegar
¼ Teaspoon Oregano
Dash Tabasco


  1. Place all sauce ingredients in a blender and hommogenise.
  2. Pour sauce into a pot and bring to boil and then simmer for 15 minutes.
  3. Barbeque the chicken pieces on a WIRE grill.
  4. Baste sauce over chicken and cook until sauce glazes.
  5. Repeat basting until all sauce has been worked into the chicken.
