Barbecued Salmon And Snow Pea Skewers
Ingredients
500 g salmon fillet, cut into 2.5 cm squares
250 g snow pea (mangetout) sprouts, trimmed
1 tablespoon wholegrain mustard
2 teaspoons chopped fresh lemon thyme or thyme
1/2 teaspoon ground cumin
2 tablespoons lemon juice
2 teaspoons honey
Serves 4
Method
1 Preheat barbecue to a medium heat.
2 Thread salmon and snow peas, alternately, onto lightly
oiled skewers.
3 Combine mustard, thyme, cumin, lemon juice and honey
in a bowl.
4 Brush mustard mixture over salmon. Cook on lightly
oiled barbecue & grill for 2-3 minutes each side or until
salmon is just cooked.
