Boiled Fruit Cake


1 Packet of Fruit Mix (500g)
1 Cup Water
1 Tablespoon Bicarbonated Soda
1 Cup Sugar
3 Shakes of All Spice
3 Tablespoons of Butter
¼ Cups Vanilla
1 Teaspoon Vanilla Essence
50g Diced Almonds
1 Cup Plain Flour
2 Eggs
1 Cup Self Raising Flour


  1. Completely mix together the fruit mix, water, bicarbonated soda, sugar, all spice and butter.
  2. Pour into a pot and boil mix 1. above for one minute.
  3. Allow mix to cool down and then thoroughly blend in the rest of the ingredients.
  4. When ingredients mixed well pour into square baking tin and put into oven for 1½ hours at a moderate temperature.

Serve cut into bite sized squares spread with a smidgen of butter (decadent) as a snack with your afternoon cup of coffee or tea.
