Thank you Annette from Victoria for this Fruit Cake:
2 Cups Raw Sugar
¾ Cup Oil
3 Cups Grated Carrot
2 Cups Wholemeal Self Raising Flour
2 Teaspoons Cinnamon
1 Teaspoon Salt
1 Teaspoon Soda
½ Cup Chopped Almonds
½ Cup Chopped Walnuts
1 Combine the sugar, oil and carrot in a Mixer.
2 Add eggs and mix in well.
3 Sift flour, cinnamon, salt & soda and add to Mixer.
4 Add the almonds & walnuts to the Mixer.
5 When fully mixed pour into a greased or lined dish and bake at 175° C. for one hour.
6 Reduce heat and and leave in oven for additional 20 minutes.
7 Test with skewer to see if cooked.
8 Cover with frosting when cold.
