Chicken Cacciatora - Serves 4

1 Large Roasting/Frying Chicken (Cut into serving pieces)
900g Tomatoes (Strained & pulped)
110g Onion (Chopped)
60ml Sherry or Marsala
1 Bay Leaf
Dash of Pepper
35g Carrot (Chopped)
1 Clove Garlic (Finely chopped)
½ Cup Oil
3 Sprigs of Parsley
2 Teaspoons Salt
1 Dredge the chicken pieces in the flour.
2 Sprinkle with 1 teaspoon of salt.
3 Brown the chicken pieces in the oil until golden.
4 Remove & keep warm.
5 Brown the onion, carrot, parsley & bay leaf in the pan.
6 Add 2 cups of the tomato pulp & the garlic to the browned vegitables.
7 Season with the remaining salt and pepper.
8 Bring the mixture to a boil.
9 Add the chicken pieces & wine.
10 Simmer until the chicken is tender (approx 30 minutes).
