Chicken Cacciatore
Ingredients
1.5kg Chicken (Cut Into Pieces)
1 Onion (Large & Finely Sliced)
1 Tablespoon Oil
1 Bay Leaf
Salt & Pepper
60g Mushrooms (Sliced)
1 Can Tomatoes (Approx. 425g - Undrained & mashed)
½ Cup Red Wine
Method
- Heat oil in pan.
- Fry chicken pieces until brown and remove and drain.
- Saute mushrooms, onions and garlic until onion is tender in same pan.
- Return chicken to pan with sauteed vegetables and add tomatoes, bay leaf & wine.
- Cook slowly for 45 minutes or until chicken is tender.
- Season with salt & pepper and remove bay leaf.
Serve this rich-tasting Italian classic hot on a bed of fluffy rice as it is a perfect dish for a chilly night.
