Chickpea and Sesame Dip

Serves 6

Ingredients

3 tblsp. tahina
2 garlic cloves (crushed)
125g chickpeas, soaked for three hours
Lemons juice (2 lemons)
Salt

Garnish
30ml olive oil
1 tsp. paprika
Parsley (finely chopped)

Method

1 Drain chickpeas, then simmer in fresh water for roughly an hour, or at least until tender. Keep the cooking water.

2 Process the chickpeas in a food processor (or blender) adding the tahina, the lemon juice, garlic, salt and enough of the cooking liquid to obtain a soft creamy consistency. Like that of a dip, really.

3 Serve on a nicely decorated plate or platter, garnished with a touch of olive oil, some parsley and a healthy covering of spicy paprika.

Tip: This delicious dip is best served with heated pita bread or similar flatbread.
