Ginger Chilli Crab Stir-Fry

Serves 6-8

Ingredients

1 tablespoon vegetable oil
2 cloves garlic, crushed
3 tablespoons desiccated coconut
2 tablespoons grated fresh ginger
1/2 cup/125 mL sweet chilli sauce
6 spring onions, chopped
2 tablespoons fish sauce
4 uncooked crabs, cleaned and quartered
2 tablespoons chopped fresh coriander

Method

1 Heat oil in a wok over a medium heat. Add garlic, coconut and ginger. Stir-fry for 1 minute. Stir in chilli sauce, spring onions and fish sauce. Stir-fry for 1 minute longer.

2 Add crab pieces and coriander. Stir-fry for 3 minutes or until crab pieces change colour and are cooked.

Cook's tip: If crab is unavailable, you could use large uncooked prawns for this recipe. Can be served with your choice of noodles or rice, if you wish.
