Chilli And Lime Rice Noodles

Serves 4

Ingredients

2 teaspoons sesame oil
2 onions (sliced)
1 tablespoon fresh ginger (shredded)
2 fresh red chillies (chopped)
4 kaffir lime leaves (shredded)
375g fresh rice noodles (rinsed and drained)
1 tablespoon brown sugar
1/4 cup/60ml lime juice
1 tablespoon fish sauce
1 tablespoon soy sauce

Method

1 Heat oil in a wok or frying pan over a high heat. Add onions, ginger, chillies and lime leaves. Stir-fry for 2 minutes.

2 Add noodles, sugar, lime juice and fish and soy sauces. Cook these ingredients, tossing frequently, for 4 minutes or until heated through.

Tip: Fresh rice noodles are lightly cooked, soft, wet noodles made from sweet glutinous rice. They are available in plastic packages in the refrigerator section of Oriental food stores and some supermarkets. Take care when cooking the noodles as they are delicate and are easily overcooked.
