Chocolate Mousse

Thank you Lisa from Queensland for this chocolate delight:

Ingredients

125g Dark Chocolate
4 Eggs (Separated)
1 Teaspoon Brandy
1 Cup Cream

Method

1 Chop chocolate roughly and put into top of double saucepan.

2 Stir over hot water until melted.

3 Remove from heat and cook slightly.

4 Gradually add brandy & egg yokes.

5 Beat until mixture is smooth & thick.

6 Whip the cream until nicely thickened (Do not over whip or the cream will be difficult to fold in).

7 Fold cream into chocolate mixture.

8 Beat egg whites until soft peak forms (Do not over beat or the whites will be difficult to fold in).

9 Fold half the egg whites into the chocolate mixture.

10 Fold the remaining half into the chocolate mixture.

11 Spoon mixture into individual dishes or one large dish.

12 Refrigerate until firm.

13 To serve, top with whipped cream and grated chocolate
