Clootie Dumpling
Ingredients:
110g Self Raising Flour
110g Suet (Shredded) [Vegetable suet can be substituted]
¼ Teaspoon Nutmeg (Ground)
1 Teaspoon Cinnamon (Ground)
110g Sultanas
110g Raisins
1 Egg (Beaten)
Fine Sugar
110g Breadcrumbs (Fresh)
110g Soft Brown Sugar
Milk (To Mix)
Method:
- Mix thoroughly together the flour, breadcrumbs, suet, cinnamon, nutmeg and sugar.
- Mix in the sultanas and raisins.
- Add the egg and sufficient milk to mix to a fairly soft consistency.
- Dip a clean large tea towel into boiling water then dredge with flour.
- Spread the tea towel into a bowl and pour the dumpling mixture into the tea towel.
- Gather up the tea towel evenly and tie tightly but leave enough room for the dumpling to expand.
- Place a plate into the bottom of a saucepan and stand the dumpling on the plate.
- Pour boiling water into the saucepan until the dumpling is covered.
- Boil gently for 2½ to 3 hours topping up with boiling water as necessary to keep the cloth covered.
- Remove from pan and carefully turn the dumpling out of the cloth.
- Dredge (or coat lightly) the dumpling with sugar.
Clootie Dumpling is a traditional Scottish pudding and should be served covered in hot custard. With left overs consider slicing and frying and having for breakfast. Yummy.
