Crab Salad with Lime and Chilli Dressing
Ingredients
8 cooked crabs
2 tablespoons chopped fresh parsley
LIME AND CHILLI DRESSING
2 fresh red chillies, seeded and finely sliced
1/4 cup/60 mL lime juice
1/4 cup/60 mL olive oil
freshly ground black pepper
Method
1 To make dressing, place chillies, lime juice, oil
and black pepper to taste in a screwtop jar. Shake well to
combine.
2 Remove crab meat from shells - reserve shells and
claws for garnish, if desired. Roughly chop crab meat.
3 Place crab meat and parsley in a bowl. Pour over
dressing. Toss to combine.
