Crunchy Salmon Pie
Ingredients:
200g Red Salmon (Canned)
85g Butter (Melted)
¼ Cup Celery (Finely Chopped)
1 Dessertspoon Chives (Chopped)
1 Onion (Finely Chopped)
Salt & Pepper
1½ Cup Savoury Biscuits (Crushed)
30ml Evaporated Milk
¼ Cup Green Pepper (Diced)
2 Eggs (Lightly Beaten)
1 Teaspoon Mustard
Method
- Mix biscuits with melted butter and press into a 230mm oven proof pie dish to make base (reserve 2 tablespoons of the mix).
- Bake base in a moderate oven for 5 to 10 minutes.
- Combine other ingredients well and spoon into pie crust (base).
- Sprinkle the reserved 2 teaspoons of mix over the top.
- Bake in a moderate oven for 30 minutes.
Cut your Crunchy Salmon Pie into wedges and serve hot with a sprig of parsley for colour. A tasty, filling, easy to make and inexpensive winter lunch dish.
