Curried Fish

Thank you Tony from Northern Territory for this hot fish dish:

Ingredients

1kg Fish Fillets or Steaks
2 Large Leeks
½ Teaspoon Ginger
1 Teaspoon Paprika
1 Tablespoon Lemon Juice
2 Cloves Garlic (Crushed)
3 Teaspoons Curry Powder
3 Large Tomatoes (Peeled & Coarsely Chopped)
¼ Cup Natural Yoghurt
Salt to Taste

Method

  1. Cut fish into halves.
  2. Sprinkle fish with lemon juice.
  3. Wash the leeks and slice, including a little of the stem.
  4. Fry the sliced leek in a little oil in a pan until softened.
  5. Add the garlic and ginger, gentle frying for another minute.
  6. Sprinkle in the curry powder and paprika, continue stirring over a low heat for another minute or two.
  7. Add fish, tomatoes and salt to taste.
  8. Cover pan and cook very gently until fish is tender.
  9. Add the yoghurt and simmer for another minute.

Serve with boiled potatoes or rice.
