Curried Fish
Thank you Tony from Northern Territory for this hot fish dish:
Ingredients
1kg Fish Fillets or Steaks
2 Large Leeks
½ Teaspoon Ginger
1 Teaspoon Paprika
1 Tablespoon Lemon Juice
2 Cloves Garlic (Crushed)
3 Teaspoons Curry Powder
3 Large Tomatoes (Peeled & Coarsely Chopped)
¼ Cup Natural Yoghurt
Salt to Taste
Method
- Cut fish into halves.
- Sprinkle fish with lemon juice.
- Wash the leeks and slice, including a little of the stem.
- Fry the sliced leek in a little oil in a pan until softened.
- Add the garlic and ginger, gentle frying for another minute.
- Sprinkle in the curry powder and paprika, continue stirring over a low heat for another minute or two.
- Add fish, tomatoes and salt to taste.
- Cover pan and cook very gently until fish is tender.
- Add the yoghurt and simmer for another minute.
Serve with boiled potatoes or rice.
