Custard Sponge



Ingredients:
4 Eggs
110g Cornflour
1 Teaspoon Cream of Tartar
110g Castor Sugar
30g Custard Power
½ Teaspoon Bicarbonate Soda

Method

  1. Separate eggs into whites and yokes.
  2. Whip whites until stiff.
  3. Stir sugar, then yokes, then remaining dry ingredients into whites with wooden spoon.
  4. Pour stirred ingredients into two 230mm baking dishes.
  5. Cook in oven at 200ºC for 20 minutes.

Custard sponge is so easy to make and has a distinctly custard flavour. Try cutting the sponge in half then joining with lots of whipped cream and sliced strawberries.
