Drambuie Meringue

Thank you Ray from Western Australia for this delectable recipe:

Ingredients

150mm Round Sponge Cake
310g of Canned Mandarins, Strawberries or Raspberries
125g Castor Sugar
2-4 Tablespoons Drambuie
Family Sized Block of Vanilla Ice-Cream
3 Egg Whites

Method

1 Place sponge cake on a flat heat proof dish.

2 Sprinkle cake all over with Drambuie.

3 Spoon a little of the fruit juice from the can over the sponge till sponge is just moist.

4 Place ice-cream in the centre of the cake.

5 Arrange drained canned fruit over and around the sponge.

6 Whisk egg whites till stiff then whisk in half the sugar.

7 Fold in remaining sugar.

8 Pile meringue all over so as to cover the sponge, ice-cream & fruit.

9 Cook in oven at 230°C for about 3 minutes or until the outside of the merangue appears brown.

10 Remove from oven and serve immediately.

Note: Serves 6.
