English Potato Salad

Ingredients

Enough Potatoes to Fill a Salad Bowl (Peeled & Cut Into Cubes)
1/3 Cup White Vinegar
1 Can Evaporated Milk
2 Rashers of Bacon (½ Rasher Per Person)
1 Onion (Roughly Chopped)
½ Green Pepper (Chopped Into Small Cubes)
½ Red Pepper (Chopped Into Small Cubes)
1 Teaspoon Butter
1 Tablespoon Plain Flour
2 Tablespoons Sugar
1 Teaspoon Salt
¼ Teaspoon Cayenne Pepper

Method

  1. Boil cubed potatoes for 5 minutes (or until cooked).
  2. Drain and set aside.
  3. Add vinegar to evaporated milk, stir and set aside.
  4. Chop bacon into small squares and sauté.
  5. Add onion and peppers and sauté.
  6. Melt butter in a large pan.
  7. Add, flour, sugar, salt & cayenne pepper to pan and stir.
  8. Gradually add milk/vinegar mix to pan.
  9. Bring to boil stirring constantly.
  10. Fold in cooked potato and sautéed ingredients .

Serve cold as a side dish together with a tossed salad at your next barbecue. The dish can also be served hot straight out of the pot.
