Fettuccine With Rocket Pesto

Serves 4

Ingredients

500g fettuccine
Gratedparmesan cheese

Rocket Pesto

250g rocket lettuce
60g pine nuts
30g grated parmesan cheese
2 cloves garlic (crushed)
3 tablespoons olive oil

Method

1. Cook pasta in boiling water in a large saucepan following packet directions. Drain and keep warm.

2. To make pesto, place rocket leaves, pine nuts, parmesan cheese and garlic in a food processor or blender and process until finely mixed.

3. With the machine running, slowly add oil and process until smooth.

4. Add pesto to hot pasta. Toss to combine.

5. Serve topped with shavings of parmesan cheese and enjoy!

Tip: To make parmesan cheese shavings, you will need a piece of parmesan cheese and using a vegetable peeler or a coarse grater, slowly remove shavings from the cheese.
