Fillet of Beef With Tomato Sauce
Ingredients For Meat:
1.125kg Fillet of Beef
2 Tablespoons Brandy
Black Pepper (Freshly Ground)
4 Bacon Rashers
Ingredients For Sauce:
1 Tablespoon Onion (Finely Chopped)
30g Butter
1 Tablespoon Flour
½ Cup Wine (Dry Red)
4 Tomatoes (Medium peeled and seeded)
1 Teaspoon Tomato Paste
1 Clove Garlic (Crushed)
1 Tablespoon Madeira (or Sherry)
1 Bay leaf (Small)
Salt & Pepper
Method for Beef
- Trim beef and brush well with brandy.
- Sprinkle beef with ground pepper.
- Wrap beef in bacon rashers.
- Set the beef on a rack in a baking dish.
- Cook in oven at 230ºC, allowing approximately 30 minutes per 450g of beef.
- When cooked cut into thick slices and smother in sauce.
Method for Sauce
- Saute onion in butter until slightly brown.
- Blend in the flour and cook for approximately one minute.
- Add wine, tomatoes, tomato paste, garlic, madeira, bay leaf, salt & pepper.
- Sir until boiling, cover and simmer for approximately 30 minutes.
- Remove bay leaf and pour onto beef.
This is a hearty, wholesome, filling meal but, of course, not for the vegetarian. Serve up with broccoli, marrow and unskinned baby potatoes and you'll be well sated.
