Fish Croquettes

Ingredients

1 Cup Boiled Fish
1½ Tablespoons Plain Flour
1 Bay Leaf
Salt & Pepper
Breadcrumbs
1 Cup Milk (or Fish Stock)
1 Tablespoon Butter
1 Egg (Beaten)
Chopped Parsley to Taste

Method

  1. Melt butter in saucepan.
  2. Add flour, salt & pepper, bay leaf, then milk (or stock).
  3. Bring to a boil.
  4. Add fish & parsley.
  5. Turn out boiled mix onto a plate, spread it out and leave it to cool, remove bay leaf.
  6. When cool scoop out one tablespoon of mixture and roll into a ball.
  7. Dip ball into a beaten egg then roll into breadcrumbs.
  8. Continue making balls and rolling in breadcrumbs until mixture is exhausted.
  9. Deep fry balls until golden brown (about 3-5 minutes).

Serve as nibblies at a party or bbq with slices of lemon and sweet chilli sauce or surround with a summer salad for a light lunch or dinner.
