Grasshopper Pie
Ingredients for Base:
110g Marie Biscuits (Crushed)
85g Chocolate Ripple Buscuits (Crushed)
110g Butter (Melted)
Ingredients for Filling:
½ Cup Milk
¼ Cup Creme de Menthe
300ml Cream
200g Marshmellows
1 Tablespoon Brandy
Method for Base
- Mix crushed biscuits and melted butter thoroughly.
- Press evenly into a greased spring form tin.
- Bake in a moderate oven for 10 minutes.
- Remove from oven and let cool.
Method for Filling
- Combine milk and marshmellows and heat over a low flame until marshmellows have dissolved .
- Allow to cool and then add brandy & Creme de Menthe.
- Lightly whip cream and fold into mixture.
- Pour mixture into the cold base.
- Place in refrigerator for at least 4 hours to chill (or in freezer and allow to freeze).
This interestingly named Grasshopper Pie comes with a surprise kick. A dessert for adults, best served chilled sprinkled with shaved dark chocolate.
