Grasshopper Pie



Ingredients for Base:
110g Marie Biscuits (Crushed)
85g Chocolate Ripple Buscuits (Crushed)
110g Butter (Melted)

Ingredients for Filling:
½ Cup Milk
¼ Cup Creme de Menthe
300ml Cream
200g Marshmellows
1 Tablespoon Brandy

Method for Base

  1. Mix crushed biscuits and melted butter thoroughly.
  2. Press evenly into a greased spring form tin.
  3. Bake in a moderate oven for 10 minutes.
  4. Remove from oven and let cool.

Method for Filling

  1. Combine milk and marshmellows and heat over a low flame until marshmellows have dissolved .
  2. Allow to cool and then add brandy & Creme de Menthe.
  3. Lightly whip cream and fold into mixture.
  4. Pour mixture into the cold base.
  5. Place in refrigerator for at least 4 hours to chill (or in freezer and allow to freeze).

This interestingly named Grasshopper Pie comes with a surprise kick. A dessert for adults, best served chilled sprinkled with shaved dark chocolate.
