Greek Salad

Prior to serving your Greek Salad pour on a liberal amount of the olive oil and lemon juice dressing and toss lightly. A refreshing Southern Mediterranean side dish to accompany the main course. Serves six.

Ingredients:

250g Fetta Cheese
1 Lettuce
4 Large Tomatoes
125g Black Olives (Pips removed)
1 Small Cucumber (Peeled & Sliced)
1 Large Onion (Sliced)
2 Tablespoons Butter
Salt & Pepper
Olive Oil
Lemon Juice

Method:

  1. Break the Fetta cheese into bite-size pieces.
  2. Wash and dry the lettuce thoroughly. Break up and put into a salad bowl.
  3. Spread the Fetta cheese on top of the lettuce leaves.
  4. Quarter the tomatoes mix with the olives and spread on the lettuce.
  5. Lay the cucumber and onion onto the lettuce.
  6. Season generously with the sale and pepper.
  7. Sprinkle generously with olive oil and set aside until ready to serve.
  8. Prior to serving prepare a dressing by mixing some olive oil with the lemon juice.
