Honey Banana Scones
Ingredients:
1 Cup Flour (Self Raising)
1 Cup Wholemeal Flour (Self Raising)
½ Teaspoon Salt
½ Cup Milk
30g Butter
2 Bananas (Ripe)
2 Tablespoons Honey
½ Punnet Blueberries
Method:
- Sift both flours and salt into a mixing bowl.
- Rub in butter until mixture resembles fine breadcrumbs.
- Mash bananas.
- Combine milk, honey and mashed bananas and add to dry ingredients and work into a soft dough.
- Turn dough onto a floured flat surface and knead lightly.
- Roll out dough into a 2cm thickness.
- Cut rolled out dough into 5 cm squares.
- Place squares onto lightly greased oven tray and glaze tops with a little milk.
- Bake in a very hot oven for 12 to 15 minutes.
Serve your Honey Banana Scones with a dollop of cream topped with a good covering of blueberries. Makes a appetite quenching afternoon tea or snack with the cup of tea or coffee. Makes 12 scones.
