Ice Cream Plum Pudding

Ingredients

2 Litres Plain Ice Cream (Softened)
1 Cup Whipped Cream
2 Level Dessertspoons Coconut
½ Cup Mixed Peel
1 Dessertspoon Mixed Spice
2 Tablespoons Sherry
2½ Cups Mixed Fruit (Colored Cherries, Currants & Almonds [all Chopped into small pieces])

Method

1. Mix all ingredients together untill smooth.
2. Add mixture to a container (A Tupperware lettuce container is ideal to give the mold a plum shape).
3. Place in freezer until solid.

Remove from container and garnish with some strawberry leaves.
