Italian Cotolette

Ingredients

900g Grilling Steak
110g Grated Parmesan Cheese
3 Eggs
450g Dry Breadcrumbs
½ Teaspoon Salt & Pepper (To Taste)

Method

  1. Cut steak into the thinest slices you can.
  2. Beat steak well with a meat tenderiser.
  3. Mix all dry ingredients together.
  4. Spread dry mix onto a piece of wax paper.
  5. Beat the eggs with a little pepper and salt.
  6. Dip sliced meat (a slice at a time) into the egg mix.
  7. Pat both sides of the sliced meat onto the dry mix until fully coated.
  8. Pour a reasonable amount of cooking oil in a pan and heat until hot.
  9. Place each slice (one at a time) into pan and fry until golden brown.
  10. Pat down each slice on absorbant paper to remove excess oil.

Serve hot with mashed potatoes, peas and broccoli.
