Italian Cotolette
Ingredients
900g Grilling Steak
110g Grated Parmesan Cheese
3 Eggs
450g Dry Breadcrumbs
½ Teaspoon Salt & Pepper (To Taste)
Method
- Cut steak into the thinest slices you can.
- Beat steak well with a meat tenderiser.
- Mix all dry ingredients together.
- Spread dry mix onto a piece of wax paper.
- Beat the eggs with a little pepper and salt.
- Dip sliced meat (a slice at a time) into the egg mix.
- Pat both sides of the sliced meat onto the dry mix until fully coated.
- Pour a reasonable amount of cooking oil in a pan and heat until hot.
- Place each slice (one at a time) into pan and fry until golden brown.
- Pat down each slice on absorbant paper to remove excess oil.
Serve hot with mashed potatoes, peas and broccoli.
