Lamb & Mushroom Casserole

Lamb & Mushroom Casserole makes for a hearty winters meal. Served up with chunky pieces of ciabatta Italian white bread and a glass of Cabernet Sauvignon you will end the meal sated and contented.

Ingredients:

900g Lamb Chops
2 Tablespoons Flour
1 Cup Stock
220g Tinned Champignons (Drained)
Salt & Cayenne Pepper
2 Tablespoons Butter
1 Onion (Chopped)
220g Tinned Mushrooms in Butter Sauce
1 Cup Tomatoes (Sliced)

Method:

  1. Cut meat into bite sized pieces.
  2. Melt butter in a pan and add meat, cook till browned.
  3. Remove meat from pan.
  4. Add onions to the pan and fry then add flour, stock and mushroom and stir to make gravy.
  5. Add meat, tomatoes, champignons and salt and pepper to taste.
  6. Add mix to casserole dish and bake at 175°C for 1½ to 2 hours
