Cheese Latkes with Fruit Topping
Ingredients
4 eggs
425g (15 oz) ricotta cheese
80ml (1/3 cup) plain flour
60ml (1/4 cup) sugar
5ml (1 tsp) baking powder
30ml (2 tbsp) oil
10ml (2 tsp) vanilla essence
250ml (1 cup) plain yogurt
250ml (1 cup) sliced banana, berries or other fruit
Method

Combine eggs, flour, sugar, baking powder, cheese and
vanilla essence, in a medium bowl with a wire whisk. Beat
until smooth and well blended.

Heat a nonstick griddle or large skillet to 160C (325F).
Lightly oil the griddle and pour just enough batter onto
the griddle so that it spreads to form 3-inch pancakes.
Cook until bubbles form on tops, and the bottoms turn
golden brown then flip and brown other side.

Place the finished pancakes on an ovenproof platter and
keep warm in a 120C (250F) oven. Oil the griddle again
and repeat with the remaining batter. Serve warm pancakes
with yogurt and fruit. A deliciously tasty treat perfect
with any main meal or even for brunch or supper.
