Lettuce Soup
Ingredients
2 Large Lettuces
1 Packet French Onion Soup
30g Butter
1 Onion (Medium Sized & Finely Chopped)
1 Tablespoon Plain Flour (Rounded)
285ml Milk
Salt & Pepper (To Taste)
Ingredients for Liaison (A liaison is a thickening agent for soups)
2 Egg Yokes
1 Teaspoon Arrowroot
2 Tablespoons Double Cream
Preparing Liaison
- Mix all ingredients for Liaison and put to side.
Method
- Wash and shred lettuce.
- Melt butter in pan.
- Add lettuce and onion to the pan.
- Cook gently for 8 to 10 minutes.
- Remove pan from heat and stir in flour.
- Scald milk in separate pan and add to lettuce mixture, add pepper and salt and stir until boiling.
- Leave to simmer gently for approximately 10 minutes with pan half covered.
- Blend soup in a food processor.
- Return to stove and add liaison.
Serve hot, topped with fried croutons and a sprig of parsley. A perfect Sunday entrée to the main course roast.
