Baked Mandarin and Brandy Sabayon
- 4 mandarins, peeled, broken into segments and white pith
- 2 tablespoons icing sugar
- 4 egg yolks
- 1/4 cup/60 mL brandy
- 1/4 cup/60 g caster sugar
1 Preheat oven to 180 C/Gas 4.
2 Place mandarin segments, overlapping and in a spiral
pattern, on four ovenproof serving plates.
3 To make sabayon, combine egg yolks, brandy and
caster sugar in a heatproof bowl set over a saucepan of simmering
water and beat for 5 minutes or until thick and creamy.
4 Pour sabayon over mandarins. Sprinkle with icing
sugar. Bake for 3-4 minutes or until lightly browned. Serve
