Naan Bread

Serves: 8 people (entree)

Ingredients:
500g flour (maida)
1 tsp baking powder
1/2 tsp bi-carb soda
2 tsp sugar
1 egg
1 cup milk
2 tsp onion seeds
3 tsp oil
salt (to taste)

Method:

1. Sift the flour with baking powder, bi-carb soda and salt. Add sugar, egg, milk and water and mix until it forms a dough ball.

2. Knead the dough well, until it has the feel of medium soft dough. Apply a little oil and cover it with a wet tea towel for one hour.

3. Make 10 equal sized balls. Apply a little oil and put onion seeds on top. Press sides first and then center of the dough ball. Roll it into a round shape. Stretch it from one side to give a triangular (elongated) shape.

4. Place the shaped dough on a greased tray. Cook in a preheated 250C oven.

5. Remove the naan when it is crisp and golden brown on both sides. Serve hot and enjoy with an Indian curry or dip.N

Tip: When making the dough, adding a small amount of chopped coriander can infuse the bread with a richer flavour, or you could add any herbs - but in this case less is always more. Garlic Naan - just add garlic - and Keema Naan is also a traditional favourite, where the bread is stuffed with spiced mince, sometimes with Tandoori-infused mince meat.
