Oven Fried Chicken With Lemon Sauce
Ingredients for Lemon Sauce:
1 Teaspoon Soy Sauce
¼ Teaspoon Pepper
1/3 Cup Lemon Juice
1 Clove Garlic (Crushed)
½ Teaspoon Salt
¼ Cup Salad Oil
1 Dessertspoon Lemon Rind (Grated)
Ingredients for Chicken:
1.5kg Roasting Chicken (Or the Equivalent in Chicken Pieces)
½ Cup Flour
¼ Teaspoon Pepper
1 Teaspoon Salt
2 Teaspoons Paprika
½ Cup Butter (Melted)
Method for Lemon Sauce:
- Combine all ingredients in a bowl and mix thoroughly.
- Place mixture in refrigerator for at least one hour before using.
Method for Chicken:
- Mix flour, pepper, salt and paprika well to make a seasoning.
- Joint the chicken and cut into serving pieces.
- Coat each of the pieces with the seasoning.
- Arrange pieces in a shallow baking dish in a single layer skin side down.
- Brush each piece with the melted butter.
- Bake uncovered for 30 minutes at 175ºC.
- After 30 minutes turn the pieces over and pour on the sauce.
- Bake uncovered for 30 minutes at 150-160ºC or bake till chicken is tender and a golden colour.
This sweet and sour tasting traditional Chinese dish can be served with a warm slice of twisted lemon and a sprig of parsley on top and a side serving of boiled rice.
