Oven Fried Chicken With Lemon Sauce



Ingredients for Lemon Sauce:

1 Teaspoon Soy Sauce
¼ Teaspoon Pepper
1/3 Cup Lemon Juice
1 Clove Garlic (Crushed)
½ Teaspoon Salt
¼ Cup Salad Oil
1 Dessertspoon Lemon Rind (Grated)

Ingredients for Chicken:

1.5kg Roasting Chicken (Or the Equivalent in Chicken Pieces)
½ Cup Flour
¼ Teaspoon Pepper
1 Teaspoon Salt
2 Teaspoons Paprika
½ Cup Butter (Melted)

Method for Lemon Sauce:

  1. Combine all ingredients in a bowl and mix thoroughly.
  2. Place mixture in refrigerator for at least one hour before using.

Method for Chicken:

  1. Mix flour, pepper, salt and paprika well to make a seasoning.
  2. Joint the chicken and cut into serving pieces.
  3. Coat each of the pieces with the seasoning.
  4. Arrange pieces in a shallow baking dish in a single layer skin side down.
  5. Brush each piece with the melted butter.
  6. Bake uncovered for 30 minutes at 175ºC.
  7. After 30 minutes turn the pieces over and pour on the sauce.
  8. Bake uncovered for 30 minutes at 150-160ºC or bake till chicken is tender and a golden colour.

This sweet and sour tasting traditional Chinese dish can be served with a warm slice of twisted lemon and a sprig of parsley on top and a side serving of boiled rice.
