1 Stick Cinnamon (About 25mm)
1 Teaspoon Arrowroot
1 Cup Sugar
2 Strips Lemon Rind
6 Pears (Ripe but Firm)
1 Tablespoon Almonds (Chopped)
Method:
- Place sugar and water in a large saucepan and stir on a low heat until the sugar dissolves.
- Add the wine, lemon rind and cinnamon.
- Cover saucepan, bring to a boil and boil for one minute to make a syrup.
- Peel the pears but do not remove the stalk.
- Cut a thin slice from the bottom of each pear to allow it to stand upright.
- Place the pears in a large pan (or oven proof dish) and pour over the wine syrup.
- Cover and cook in a moderate oven for 30-40 minutes or until pears are tender (but not mushy).
- Baste the pears frequently while cooking.
- Remove the pears from oven and place each in an individual serving dish.
- Thicken the wine syrup with the arrowroot and pour over the pears.
