Pears in Red Wine



Ingredients:

½ Cup Water
½ Cup Burgundy (or Other Red Wine)
1 Stick Cinnamon (About 25mm)
1 Teaspoon Arrowroot
1 Cup Sugar
2 Strips Lemon Rind
6 Pears (Ripe but Firm)
1 Tablespoon Almonds (Chopped)

Method:

  1. Place sugar and water in a large saucepan and stir on a low heat until the sugar dissolves.
  2. Add the wine, lemon rind and cinnamon.
  3. Cover saucepan, bring to a boil and boil for one minute to make a syrup.
  4. Peel the pears but do not remove the stalk.
  5. Cut a thin slice from the bottom of each pear to allow it to stand upright.
  6. Place the pears in a large pan (or oven proof dish) and pour over the wine syrup.
  7. Cover and cook in a moderate oven for 30-40 minutes or until pears are tender (but not mushy).
  8. Baste the pears frequently while cooking.
  9. Remove the pears from oven and place each in an individual serving dish.
  10. Thicken the wine syrup with the arrowroot and pour over the pears.

Serve your Pears in Red Wine dessert with a dollop of thickened cream sprinkled with chopped almonds. Basic ingredients and easy to make. Ready in 45 minutes and serves six.
