Potage Parmenitier

Potage Parmenitier (or Leek & Potato Soup) should be served hot with a sprinkling of chopped parsley. Dip chunks of Ciabatta and savour. Serves six.

Ingredients:

3 Large Leeks (Thinly Sliced)
450g Potatoes (Thinly Sliced)
1 Dessertspoon Salt
1.75l Water
Seasoning
150ml Cream
2 Tablespoons Parsley (Finely Chopped)

Method:

  1. Wash and drain leeks.
  2. Add leeks, potatoes and salt to pot, cover and simmer for 40 minutes.
  3. Purée vegetables.
  4. Add seasoning to taste.
  5. Reheat for 5 minutes.
  6. Prior to serving add cream.
