Potato Casserole

Ingredients

4 Potatoes (Large)
1 Onion (Large)
Sprig of Parsley
Pepper & Salt
Black Olives (Hand Full & Pitted)
100g Butter

Method

  1. Peel and cut potatoes into 10mm slices.
  2. Boil potatoes for a 10 minutes, then drain.
  3. Saute the onion.
  4. Place cooked potato slices and onion in layers in casserole dish.
  5. Sprinkle parsley, pepper and salt, butter and olives into casserole dish.
  6. Cook uncovered in moderate oven until golden brown - approximately ½ hour.

Serve hot as a side dish with some seasonal vegetables to add color with your meat, poultry or fish main.
