Potato Casserole
Ingredients
4 Potatoes (Large)
1 Onion (Large)
Sprig of Parsley
Pepper & Salt
Black Olives (Hand Full & Pitted)
100g Butter
Method
- Peel and cut potatoes into 10mm slices.
- Boil potatoes for a 10 minutes, then drain.
- Saute the onion.
- Place cooked potato slices and onion in layers in casserole dish.
- Sprinkle parsley, pepper and salt, butter and olives into casserole dish.
- Cook uncovered in moderate oven until golden brown - approximately ½ hour.
Serve hot as a side dish with some seasonal vegetables to add color with your meat, poultry or fish main.
