Pumpkin Soup
Ingredients:
4½ Cups Pumpkin (Cut into Cubes)
30g Butter
2 Chicken Stock Cubes
1 Small Onion (Finely Diced)
3 Cups Water
1 Cup Milk
Salt & Pepper to Taste
Method
- Melt butter in pot then add onion and pumpkin and cook for 5 minutes.
- Add water and stock cubes and simmer until tender.
- Blend above mix till smooth.
- Return mix to pot and stir in milk, salt and pepper and return to heat.
This Pumpkin Soup recipe is a filling, quick to prepare winters lunch dish. Serve with crusty bread, decorated with a swirl of cream and topped with a sprig of parsley.
