Pumpkin Soup



Ingredients:
4½ Cups Pumpkin (Cut into Cubes)
30g Butter
2 Chicken Stock Cubes
1 Small Onion (Finely Diced)
3 Cups Water
1 Cup Milk
Salt & Pepper to Taste

Method

  1. Melt butter in pot then add onion and pumpkin and cook for 5 minutes.
  2. Add water and stock cubes and simmer until tender.
  3. Blend above mix till smooth.
  4. Return mix to pot and stir in milk, salt and pepper and return to heat.

This Pumpkin Soup recipe is a filling, quick to prepare winters lunch dish. Serve with crusty bread, decorated with a swirl of cream and topped with a sprig of parsley.
