Noodles with Tofu & Bok Choy

Serves 4

Ingredients

250g noodles

Bok Choy & Tofu sauce
1 tablespoon vegetable oil
2 bunches baby bok choy (leaves separated and trimmed)
1/3 cup/90ml soy sauce
2 tablespoons sesame oil
2 tablespoons kechap manis
2 tablespoons sweet chilli sauce
2 tablespoons pickled ginger
315g tofu, cut into 1 cm cubes
155g bean sprouts

Method

1 Cook noodles in boiling water in a large saucepan following packet directions. Drain - but keep warm.

2 To make sauce, heat oil in a wok over a high heat. Add bok choy. Stir-fry for 2-3 minutes. Add soy sauce, sesame oil, kechap manis, chilli sauce and ginger. Bring to heat and simmer for 1 minute.

3 Add tofu and bean sprouts. Stir-fry for 2-3 minutes or until heated through. Add noodles, Toss to combine.

Tip: Kechap manis, sometimes called sweet soy sauce or Indonesian soy sauce, is a thick sweet seasoning sauce made of soy sauce, sugar and spices. If you can't find this type of soy sauce, a mixture of soy sauce and dark corn syrup or golden syrup can be used in its place.
