Quiche Lorraine

Ingredients Pastry
1 Cup Self Raising Flour
1 Egg Yoke
55 grams Butter or Substitute
1 Tablespoon Water
Ingredients Filling
3 Eggs
¼ Litre Cream
¼ Litre Milk
½ Cup Grated Matured Cheese
3 Bacon Rashers (Chopped Into Small Pieces)
1 Medium Onion (Chopped)
Herbs to Taste
Method for Pastry
1 Rub butter (or substitute) into flour.
2 Add beaten egg yoke & water.
3 Mix well and roll out to desired shape.
Method for Filling
1 Fry bacon & onion.
2 Beat eggs & milk.
3 While beating add cream, cheese, bacon, onion & herbs.
4 Pour mixture into the uncooked shell (pastry).
5 Bake in hot oven for 10 minutes.
6 Reduce heat to 220ºC.
7 Bake until filling is set.
8 Remove from oven.
9 Serve hot or cold.
