Raspberry Slice
Ingredients
1½ Cups Self Raising Flour
1 Cup Coconut
170g Butter (Shortening)
½ Cup Rolled Oats
1 Cup Brown Sugar
¾ Cup Raspberry Jam
Method
- Sift flour into a bowl.
- Add other dry ingredients.
- Mix thoroughly.
- Rub in shortening and knead thoroughly.
- Divide mixture in half.
- Place half of the mixture in a greased lamington baking dish and press it
out even and flat.
- Spread jam evenly over mixture in dish.
- Spread remaining half of mixture evenly over jam.
- Place dish in a moderately hot oven and bake for about 30 minutes.
- Remove from oven and allow to cool slightly.
- while still warm cut into fingers and loosen edges.
- Turn out of dish when cooled and ready to eat.
Makes for a great afternoon tea snack or to add to the
decoration of the Christmas table at the family gathering on Christmas Day.
