Raspberry Slice

Ingredients

1½ Cups Self Raising Flour
1 Cup Coconut
170g Butter (Shortening)
½ Cup Rolled Oats
1 Cup Brown Sugar
¾ Cup Raspberry Jam

Method

  1. Sift flour into a bowl.
  2. Add other dry ingredients.
  3. Mix thoroughly.
  4. Rub in shortening and knead thoroughly.
  5. Divide mixture in half.
  6. Place half of the mixture in a greased lamington baking dish and press it out even and flat.
  7. Spread jam evenly over mixture in dish.
  8. Spread remaining half of mixture evenly over jam.
  9. Place dish in a moderately hot oven and bake for about 30 minutes.
  10. Remove from oven and allow to cool slightly.
  11. while still warm cut into fingers and loosen edges.
  12. Turn out of dish when cooled and ready to eat.

Makes for a great afternoon tea snack or to add to the decoration of the Christmas table at the family gathering on Christmas Day.
