Ingredients:
500g Button Mushrooms
½ Cup Olive Oil
3 Tablespoons Vinegar
2 Tablespoons Capers
3 Tablespoons Red Pepper (Chopped)
¼ Teaspoon Cayenne
1 Lettuce
2 Eggs (Hard Boiled)
2 Tablespoons Chopped Parsley
Salt & Pepper
Method:

Wipe the mushrooms with a damp cloth and slice them thinly.

Mix together the oil, vinegar, capers, red pepper, cayenne and salt & pepper.

Add the mushroom to the mix and toss lightly.

Leave mix to marinate for about two hours.

Wash the lettuce thoroughly and tear into bite sized pieces.

Place the lettuce in a salad bowl and spoon the mushrooms with the marinade over the lettuce.

Chop the hard boiled eggs and arrange on top of the mushrooms.

Sprinkle with the chopped parsley and serve.
