Rhubarb Jam
Thank you Chantale Delrue from Hobart for this jam with a bite:
Ingredients
1 kg Rhubarb
1 kg sugar
Zest of One Orange
Juice of ½ an Orange
One 4cm Piece of Ginger (Grated)
Method
1 Peel the rhubarb and cut into 3cm pieces.
2 Cover with sugar, orange zest and orange juice.
3 Leave it to stand overnight.
4 Next day, bring to the boil and simmer all the ingredients, constantly stirring, until
it starts to set.
5 (If needed, add one packet of jam setter when it comes to the boil, i.e. if the mix is too runny).
6 Scoop into sterilised jars.
7 Allow to cool and seal jars.
Enjoy this jam with a bite by itself or with cheese.
