Ingredients:
3 Medium Onions (Chopped)
40g Butter X 2
250g Mushrooms (Chopped)
500g Button Mushrooms
1 Cup White Wine
500g Rice
5 Cups Stock
2/3 Cup Parmesan Cheese (Grated)
2/3 Cup Cream
Salt & Pepper
Chopped Chives
Method:
- Saute the onions in butter (40g) until golden brown.
- Quarter the mushrooms and add to onions.
- Stir until the mushrooms are coated in butter.
- Add the white wine and boil rapidly until wine has evaporated.
- Stir in the rice and pour on ½ the stock. Add extra stock a little at a time until it is absorbed and the rice is tender.
- Stir in ½ the cheese, the remaining butter (40g) and the cream.
- Season to taste with the salt and pepper.
- Serve sprinkled with the remaining cheese and chopped chives
