Rice With Mushrooms

Rice with Mushrooms is a hearty steaming dish flavoured with Parmesan cheese. Sprinkled with chives to bring out the colour, it will warm you from the inside out on a winters day. Serves six.

Ingredients:

3 Medium Onions (Chopped)
40g Butter X 2
250g Mushrooms (Chopped)
500g Button Mushrooms
1 Cup White Wine
500g Rice
5 Cups Stock
2/3 Cup Parmesan Cheese (Grated)
2/3 Cup Cream
Salt & Pepper
Chopped Chives

Method:

  1. Saute the onions in butter (40g) until golden brown.
  2. Quarter the mushrooms and add to onions.
  3. Stir until the mushrooms are coated in butter.
  4. Add the white wine and boil rapidly until wine has evaporated.
  5. Stir in the rice and pour on ½ the stock. Add extra stock a little at a time until it is absorbed and the rice is tender.
  6. Stir in ½ the cheese, the remaining butter (40g) and the cream.
  7. Season to taste with the salt and pepper.
  8. Serve sprinkled with the remaining cheese and chopped chives
