Rice With Spinach

Serve your Rice with spinach hot, sprinkled with melted Parmesan cheese. This ideal vegetarian dish makes for a filling brunch on a cold winters mid morning. Serves four.

Ingredients:

50g Butter
1 Medium Onion (Chopped)
250g Spinach (Chopped)
1 Cup Rice
375ml Hot Water
2 Tablespoons Parsley (Chopped)
Salt
Parmesan Cheese (Grated)

Method:

  1. Melt the butter in a saucepan and saute the onion until transparent.
  2. Add the chopped spinach and cook for another 5 minutes.
  3. Add the rice and stir until the rice is well coated with the butter.
  4. Add the hot water, stir a few times, cover and cook over a low to medium heat for 20 minutes. (The rice should be tender and water all absorbed after this time. If the rice is not cooked, add a little more boiling water and cook for a few more minutes. If the rice is tender but the water is not all absorbed, cook over a low heat uncovered for a few minutes).
  5. Stir in the chopped parsley and season to taste with salt.
