Savoury Cheese Fish Bake

Ingredients

500g Fish Fillets (Fresh)
2 Teaspoons Lemon Juice
¼ Cup Red or Green Capsicum (Diced)
1 Can Condensed Oyster or Mushroom Soup
½ Cup Cheddar Cheese (Grated)
Salt & Pepper
¼ Cup Celery (Diced)
30g Butter
½ Cup Milk
½ Teaspoon Paprika

Method

  1. Arrange fish fillets in a casserole dish.
  2. Add salt & pepper to taste and pour lemon juice evenly over fish.
  3. Saute celery and capsicum in butter in frying pan.
  4. Add soup and milk to frying pan, heat through and pour into casserole onto fish.
  5. Sprinkle cheese and paprika over fish in casserole.
  6. Bake in a moderately hot oven (190ºC) for 30 minutes or until the fish flakes easily and the top is lightly browned.

Serve hot with a side plate of seasonal vegetables or cold with a light colourful salad.
