Scottish Ginger Cake

Ingredients

225g Butter
1 Cup Sugar
2 Eggs
½ Cup Milk (Warm)
2 Cups Plain Flour
¾ Cup Golden Syrup
1 Dessertspoon Ginger
1 Dessertspoon Cinnamon
1 Teaspoon Spice
1 Teaspoon Carbonated Soda
½ Cup Boiling Water

Method

  1. Beat butter and sugar in a large bowl.
  2. Add eggs one at a time.
  3. Add golden syrup to milk and then mix into bowl.
  4. Mix in all other dry ingredients.
  5. Mix carbonated soda in boiling water and add to bowl.
  6. Mix ingredients of bowl thoroughly.
  7. Pour ingredients into large cake tin and bake in oven at 175ºC.

Serve warm as a dessert with a dollop of thickened cream or a big scoop of vanilla ice-cream or slice up and eat it cold with a cup of expresso.
