Scottish Ginger Cake
Ingredients
225g Butter
1 Cup Sugar
2 Eggs
½ Cup Milk (Warm)
2 Cups Plain Flour
¾ Cup Golden Syrup
1 Dessertspoon Ginger
1 Dessertspoon Cinnamon
1 Teaspoon Spice
1 Teaspoon Carbonated Soda
½ Cup Boiling Water
Method
- Beat butter and sugar in a large bowl.
- Add eggs one at a time.
- Add golden syrup to milk and then mix into bowl.
- Mix in all other dry ingredients.
- Mix carbonated soda in boiling water and add to bowl.
- Mix ingredients of bowl thoroughly.
- Pour ingredients into large cake tin and bake in oven at 175ºC.
Serve warm as a dessert with a dollop of thickened cream or a big scoop of vanilla ice-cream or slice up and eat it cold with a cup of expresso.
