Seafood Casserole

Ingredients
1 Stick Celery
½ Red Pepper
½ Green Pepper
110g Button Mushrooms
225g Large Prawns
Seasoning
55g Butter
1 Medium Sized Can Bean Shoots
2 Red-Skinned Apples
¼ Litre Chicken Stock
Method
1 Clean and chop celery.
2 Clean and dice red and green peppers.
3 Slice but do not peel the apples.
4 Melt the butter in a saucepan and add celery and peppers.
5 Cook celery & peppers and when soft add mushrooms.
6 Cook for a further 2 minutes.
7 Add bean shoots (including liquid), prawns, sliced apples and seasoning.
8 Pour in chicken stock.
9 Bring to a boil and then cook gently for a further 5 minutes.
10 Pour into a casserole dish and serve with freshly chopped raw celery.
